As far as I can remember I never liked ice cream. If I needed a frozen refreshment, I went for a classic Raketje, once or twice a year. Somehow, IJscuypje managed to convert me though: I recently started having ice cream for breakfast. Based in Amsterdam for over 4 years now, IJscuypje has been making a lot of us forget about other fancy brands. No wonder, if you know that their ice cream is made fresh each and every morning, right on the spot. For the recipes of the 28 different flavours they alternately offer, owner Edwin went right back to the origins. He decided to mix up best of two worlds: Italian knowledge and Belgian skills. Within 4 years, this ‘mix up’ led to 5 Amsterdam based shops and 1 in Haarlem, that each sell 100 liters a day easily.

Edwin ascribes his success to the fact that nowadays, we all want an honest story behind our food. Let me tell you, IJscuypje has such a honest story. Their sorbets for instance, contain 60% fresh fruits, all biologically harvested. No conservatives, no dyes and no artificial flavours are added, so I can assure you, this is as healthy as ice cream can get. At the same time they import their pistache oil right from Sicilia, chocolate comes from Belgium, etc. I could go on and on, but I guess you get the point. Go get yourself some ice cream!
